
Your recipe and instruction guide for the
Perfect thanksgiving meal


Let's start with the bird!
Preparation:
(The Day Before)
This step is essential for crispy skin and flavor!
1.Thaw Completely:
If frozen, place the turkey in the refrigerator 1 day for every 4 pounds.
A 12-lb turkey takes about 3 days.
Make the butter mixture:
In a bowl, combine the softened butter,
chopped rosemary, thyme, sage,
1 tablespoon of salt, or to taste
and 1 teaspoon of pepper. or to taste
Mix well.
Dry Brine:
Remove the turkey from the fridge.
Take out the neck and giblets from the cavities.
Pat the entire turkey very dry with paper towels.
Air Chill:
Place the turkey on the roasting rack inside the roasting pan.
Put the turkey uncovered back in the refrigerator overnight.
This draws moisture out of the skin, guaranteeing a crisp result.
Roasting Day Instructions
Timing: Allow 30 minutes for seasoning and preheating, 2–3 hours for cooking, and 30 minutes for resting.
Seasoning and Buttering
Preheat: Arrange your oven rack to the lowest setting
preheat the oven to 425°F (220°C).
Apply Butter (The Secret to Juiciness):
Remove the turkey from the fridge.
Starting at the breast cavity,
gently slide your fingers between the skin and the breast meat to loosen the skin.
Rub about two-thirds of the compound butter
directly onto the breast meat under the skin.
External Rub: Use the remaining butter
generously coat the entire exterior of the turkey skin.
Stuff the Cavity: (optional)
Loosely fill the turkey cavity with the chopped onion, celery, and carrots.
This adds moisture and flavor to the pan drippings for your gravy.
Truss (Optional but Recommended):
Use kitchen twine to tie the drumsticks together.
This helps the turkey cook evenly.
The Roast
Initial High Heat (15 Minutes):
Place the turkey in the preheated 425°F oven.
The high heat ensures the skin begins to crisp up immediately.
Reduce Heat and Continue (2–3 Hours):
After 15 minutes, reduce the oven temperature to 325°F (160°C).
Basting? (**Don't Bother!**):
Do not open the oven to baste.
Basting only lowers the oven temperature and softens the skin.
The butter mixture will do the job for you.
Testing and resting
check the turkey's internal temperature in three places:
Thigh (deepest part, avoiding bone)
Breast (thickest part)
Wing joint.
Target Temperature: The turkey is done when the temperature registers 165°F (74°C) in the thigh and breast.
Crucial Resting Period:
Once the turkey is done,
immediately remove it from the oven
carefully transfer it to a large cutting board.
Tent it loosely with foil.
Rest for 30 Minutes:
This is the most important step for juicy meat!
The temperature will continue to rise (carry-over cooking)
The juices will redistribute.
Do not carve it early.

Classic Sage and Herb Stuffing
(The Perfect Thanksgiving Side)
This simple recipe ensures a moist, savory stuffing that makes use of the same herbs you used for your turkey, tying the flavors of the whole meal together.
Ingredients
Bread: Stale Bread Cubes8 cups
(1-inch cubes, dried overnight is best)
FatUnsalted Butter1 cup (2 sticks)
Vegetables
1 Yellow Onion, finely diced
4 stalks celery, finely diced
Herbs
3 Tbsp Fresh Sage, chopped
1 Tbsp Fresh Thyme, chopped
Seasoning
1 tsp Kosher Salt
1/2 tsp Freshly Ground Black Pepper
2.5 to 3 cups Chicken or Turkey Broth (warm)
2 Large Eggs, lightly beaten
Prep the Bread
Cube the bread 1–2 days in advance
leave it out on a baking sheet to dry,
or toast the cubes in a 350°F (175°C) oven for 10–15 minutes
until just golden and dry.
This step prevents soggy stuffing!
Place the dried bread cubes in a very large mixing bowl.
Sauté the Aromatics
In a large skillet or Dutch oven,
melt the 1 cup of butter over medium heat.
Sauté Vegetables:
Add the diced onion and celery
to the pan.
Cook for about 8–10 minutes, stirring occasionally, until the vegetables are very soft and translucent.
Do not let them brown.
Add Herbs:
Stir in the chopped
fresh sage and thyme,
along with the
salt and pepper.
Cook for 1 minute until the herbs are fragrant.
Remove the skillet from the heat.
Combine and Bake
Moisten the Bread:
Pour the entire sauté mixture (butter, vegetables, and herbs)
over the bread cubes in the mixing bowl.
Toss gently but thoroughly until the bread is completely coated.
Add Liquid:
Pour in 2 cups of the warm broth and the lightly beaten eggs.
Toss gently again. The stuffing should be moist, but not soaking wet.
Add the remaining 1/2 cup of broth
if the mixture still seems too dry
it should hold together when squeezed.
Transfer to Pan:
Lightly grease a 9x13 inch baking dish.
Spoon the stuffing mixture into the dish.
Do not pack it down if you want a lighter, fluffier stuffing.
Cover the dish loosely with foil and bake in a
350°F (175°C) oven for 30 minutes.
Crisp the Top:
Remove the foil and bake for an additional 15–20 minutes,
or until the top is golden brown and delightfully crisp
The perfect mashed potatoes
Mom's "Lumpy Taters"
The first step in making a great batch of mashed potatoes is the potatoes themselves. This recipe requires Russet potatoes only.
The number of potatoes you'll need depends on the number of guests you're planning on. I grew up in a large family, so I'm not sure how to make just a little bit! I like to plan on 1-2 potatoes per person; if you think about it, that's about the size of a helping.
This recipe is for lumpy mashed potatoes!
(If you want creamy, you'll have to find the recipe somewhere else.)
We only do lumpy taters in our house.
Instructions
Prep the Potatoes: Peel potatoes completely—no skin and no eyes left. Cut them into roughly 1-inch cubes.
Boil the Potatoes: Place the potatoes in a large pot and cover them completely with cold water. (Starting them in cold water helps them cook more evenly, so the outside doesn't get mushy while you wait for the inside to cook.)
Cook Until Tender: Bring the water to a boil, then lower the heat to a steady simmer. Boil for about 20-25 minutes. Periodically check with a fork to see if they are done. They are ready as soon as you can stab them and the fork goes through easily.
Drain and Mash: Drain the potatoes thoroughly in a colander and transfer them to a large bowl. Begin mashing the potatoes by hand with a potato masher. I like to put the butter in while I mash.
How much butter? Measure with your heart.
I usually use at least 2 sticks for a large bowl.
Mix (but Not Too Much!): When the potatoes are all broken up and the butter is melted, get out your hand mixer (if you have one). I like to run the hand mixer through just to break everything up a little more, but not too much.
Add Dairy: While you are blending, add in milk or cream a little at a time (I use both) until the consistency is right. Only you can tell what the right consistency is. Give them a taste—if they are too dry, add some more milk.
Season to Perfection: When they are mixed to your satisfaction, this is when I go in with the salt, I only use salt in my taters. For me, there is a point where it just tastes right.
I salt, then mix, and repeat until they taste perfect.
The Philosophy
(The Most Important Part)
My philosophy is that mashed potatoes should stand alone—meaning, they should be amazing all by themselves.
This is why I require at least one taster other than myself just to make sure we have enough salt and/or butter. Sometimes it just needs more butter. Be careful with your taster: if they love what you've done, they won't want to stop sneaking spoonfuls before dinner!
When they are done, just cover your bowl with foil; they should stay warm. You can also put them in a warm oven if you have the space.
